Our family’s options for yummy desserts are limited, so when we discovered this fall delight it was definitely a reason to celebrate! This pumpkin fudge is easy to make and much more…it’s full of healthy fat, fiber, and still delicious! Also Paleo, vegan, and low in sugar!! It can be enjoyed cold or room temp.
2 cups pumpkin puree (I like Farmer’s Market brand PBA-free carton)
2 Tbsp coconut butter, melted
1 cup coconut flour
1/3 cup coconut sugar
Cinnamon and extra sugar for sprinkling
In a large mixing bowl, combine the coconut flour and coconut sugar.
Add the pumpkin and coconut butter and mix well.
Transfer to a parchment lined dish (I used 8×8), and sprinkle with cinnamon and sugar. Freeze for 15 minutes. Cut and enjoy!
